Clams with black bean sauce is a seafood dish made with fresh and tender clam meat as the main ingredient, stir-fried with fermented soybean sauce. Fermented black beans is a traditional Chinese seasoning made from soybeans and salt, which undergoes a series of fermentation and curing processes, resulting in a rich aroma of soybeans and a salty and savory taste. The fermented soybean sauce gives the clam meat a rich umami flavor.

  • Thoroughly rinse the clams under cold water to remove sand and discard clams with damaged shells.
  • In a small bowl, mix together soy sauce, Shaoxing Wine, sugar, water and cornstarch and mix well.
  • Heat a skillet and pour in vegetable oil, ensuring it covers the bottom of the pan. Add black bean sauce, garlic, ginger, and red chili to the skillet, stir-frying for 30 seconds until fragrant. Add the clams and stir-fry for 1 minute until they start to open.
  • Add the sauce to the skillet and simmer for 3-4 minutes until the shells are fully open.
  • Garnish with chopped green onions and serve hot.

Notes

Make sure to discard any clams that do not open after cooking as they may be spoiled and not safe to eat.
