  • Put the chocolate in a heatproof bowl. Fill a saucepan with water and bring it to a boil. Remove it from the heat and place the bowl in the saucepan. Stir occasionally until the chocolate has melted.
  • In a separate bowl, whip the heavy cream until soft peaks form. This will add airiness to the mousse.
  • In another bowl, beat the egg whites with sugar until it reaches stiff peaks. Stir in the pure vanilla extract.
  • Gradually add the melted chocolate to the egg whites mixture, stirring continuously until well combined. Gently fold the whipped cream into the chocolate mixture until no white streaks remain. Be delicate to keep the mousse light and airy.
  • Spoon the chocolate mousse into serving glasses or ramekins. Cover and refrigerate for at least 2 hours, allowing the mousse to set and flavors to meld.
  • Just before serving, garnish with whipped cream, chocolate shavings, or fresh berries if desired.
