  • Heat oil in a skillet over medium heat. Add onion, bell peppers, and shredded chicken. Sprinkle fajita seasoning on top and mix well. Sauté until the vegetables become tender, approximately 6-7 minutes. Afterwards, transfer the cooked vegetables and chicken to a bowl.
  • Heat a small amount of oil in a large skillet over medium-low heat. Place one tortilla in the skillet and sprinkle it with a quarter of shredded Monterey Jack cheese, a quarter of shredded Cheddar cheese, half of the bell peppers, onions, and chicken. Top with an additional quarter of Monterey Jack cheese and an additional quarter of cheddar. Finally, place another tortilla on top.
  • Cook the quesadilla for 2-3 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese is melted. Make another chicken quesadilla using the same method.
  • Remove the quesadilla from the skillet and let it cool for a minute before slicing into wedges. Serve hot with salsa, sour cream, and guacamole on the side.
