  • Preheat your oven to 425°F (220°C).
  • Cook the chicken breasts by baking, boiling, or sautéing until fully cooked. Dice the chicken into bite-sized pieces and set aside.
  • In a large skillet, melt the butter over medium heat. Add diced onions, celery, and carrots. Sauté until the vegetables are tender, about 5 minutes.
  • Sprinkle the flour over the vegetable mixture and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste. Add dried thyme, salt, and black pepper. Mix until well combined.
  • Gradually whisk in the chicken broth and milk, ensuring there are no lumps. Cook and stir until the mixture thickens, forming a creamy sauce. Add the chicken cubes and frozen peas to the skillet. Stir until the filling is well combined. Allow the mixture to simmer for a few minutes to let the flavors meld.
  • Place one pie crust in the bottom of a pie dish. Pour the chicken filling over the crust. Place the second pie crust over the filling. Trim any excess crust and crimp the edges to seal the pie.
  • Bake the chicken pot pie in the preheated oven for 35 minutes or until the crust is golden brown. Allow the chicken pot pie to cool for a few minutes before slicing and serving. Enjoy the comforting goodness of homemade chicken pot pie!
