  • Combine the sauce ingredients in a small bowl. Set aside.
  • In a pot, bring water to a boil, and add a pinch of salt. Boil shiitake mushrooms, wood ear mushrooms, and bean curd sheet for 3 minutes. Then, add carrots, baby corn, snap peas, and the white parts of the napa cabbage. Cook for 2 minutes. Finally, add the napa cabbage leaves to the pot and cook for an additional minute. Drain the vegetables and transfer them to a bowl.
  • Heat vegetable oil in a large skillet over medium heat. Stir in ginger slices and fry for 30 seconds until fragrant. Pour the sauce into the skillet and stir-fry for an additional 30 seconds until fragrant. Add the boiled vegetables to the skillet, then add enough water to cover all the ingredients. Bring it to a boil, then reduce the heat to low and cover the skillet. Allow the vegetables to simmer for about 3 minutes, add the vermicelli, and simmer for an additional 4-5 minutes. Serve and enjoy!
