  • Combine the sauce ingredients in a small bowl and mix well.
  • Heat the vegetable oil in a large wok over medium-high heat. Add the chicken pieces and brown them on all sides until they develop a golden color.
  • Add the green onion, garlic, and ginger to the same wok. Sauté for about 1 minute until fragrant.
  • Stir in the shiitake mushrooms. Pour in the sauce and water, making sure the chicken is mostly covered. Stir to blend everything together.
  • Bring the chicken broth to a boil, then reduce the heat to low. Cover the wok and let the chicken simmer for about 25 minutes, until it is cooked through and tender. About 10 minutes before the chicken is done, add the roasted chestnuts to the wok. Let the chestnuts simmer in the broth for a while to absorb the flavors.
