The story of the Black Forest Cake is a legendary journey through time that takes us to the enchanting Black Forest region of Germany. This picturesque land, with its dense forests and mysterious ambiance, gave birth to a culinary masterpiece. Layers of chocolate sponge cake are sandwiched between generous spoonfuls of cherry filling and layers of whipped cream. The cake’s exterior is adorned with more whipped cream, and sometimes chocolate shavings or curls, resembling the winter snow in the forest.
Preheat the oven to 350°F (175°C). Line two 9-inch round cake pans with parchment paper.
In a large mixing bowl, combine all the dry ingredients and mix well. In a separate bowl, mix all the wet ingredients until well combined. Pour the wet ingredients into the dry ingredients. Stir until just combined. Pour the batter evenly into the prepared pans.
Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center comes out clean. Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, remove the cakes from the pans and place them on wire racks to cool completely.
In a saucepan, combine the chopped cherries, cherry juice, sugar and cornstarch. Cook over medium heat, stirring constantly until the mixture thickens and comes to a boil. Reduce heat and simmer for a couple of minutes until it's a thick, jam-like consistency. Remove from heat and let it cool completely. Stir in cherry liqueur.
In a chilled mixing bowl, whip the heavy cream until it starts to thicken. Add the powdered sugar and continue to whip until stiff peaks form.
Place one of the cooled chocolate cake layers on a rotating cake stand. Spread a layer of whipped cream on top of the cake. Spoon the cherry filling over the whipped cream. Place the second cake layer on top and press it down gently. Frost the top and sides of the cake with the remaining whipped cream.
Decorate the cake with chocolate shavings or curls and cherries. Refrigerate the cake for at least an hour before serving to let the flavors meld together. Slice, serve, and enjoy your homemade Black Forest Cake!
