  • In a bowl, add the chopped green onions, ground pork, soy sauce, oyster sauce, Shaoxing wine, sesame oil, sugar and pinch of salt. Add 1 tablespoon of oil to the meat. Mix everything together until ground pork becomes sticky.
  • In a separate bowl, crack the eggs, add cornstarch and water, and whisk the eggs until they are slightly frothy.
  • Heat a small skillet over low heat. Add a small amount of vegetable oil to coat the pan. Pour 1 tablespoon of the egg mixture into the skillet, swirling it around to spread it evenly. Place 1-2 teaspoons of the meat mixture in the center of the egg pancake, then fold the egg pancake over and gently press the edges together with a pair of chopsticks to seal, forming a half-moon shape. Continue making the egg dumplings until you have used up all the eggs and ground pork.
  • Serve the egg dumplings as a snack or appetizer.
