  • Rinse the dried soybeans thoroughly under running water to remove any dirt or impurities.
  • Place the soybeans in a large bowl and cover them with water. Allow them to soak overnight or for at least 8 hours. The soybeans will expand, so make sure to use enough water.
  • Rinse and drain the soaked soybeans.
  • In a blender, combine the soaked soybeans with 4 cups of fresh water. Blend on high speed for 1-2 minutes until the mixture becomes smooth and creamy.
  • Place a large cheesecloth over a bowl. Pour the blended mixture into the cheesecloth, then squeeze and twist to extract the soy milk. The soybean residue will remain in the cheesecloth.
  • Transfer the soy milk to a large pot and place it over medium-high heat. Bring it to a boil, stirring frequently and keeping a close eye on the pot as soy milk foams up quickly when heated, similar to regular milk. Once it starts bubbling, turn off the heat to let the foam subside. Allow the soy milk to continue boiling for 7 to 8 minutes.
  • If desired, add sugar to the extracted soy milk and stir well to combine. The soy milk can be stored in the refrigerator for up to 3-4 days.
  • Shake or stir the soy milk before serving, as some settling may occur. Enjoy it chilled or warm.

Notes

The leftover soybean pulp can be used in other recipes, such as making soybean curd (tofu) or adding it to baked goods for added texture and nutrition. Please note that this recipe is a basic guideline, and you can adjust the water-to-soybean ratio, sweetener, and flavorings according to your taste preferences.
