  • Wash the spinach thoroughly under cold water to remove any dirt or grit. Trim off wilted leaves and ends.
  • Bring a large pot of water to a boil. Blanch the spinach in the boiling water for about 30 seconds, until wilted but still vibrant green.
  • Immediately transfer the blanched spinach to a bowl of ice water to stop the cooking process and preserve its color. Drain the spinach thoroughly and squeeze out any excess water.
  • In a mixing bowl, combine the soy sauce, sesame oil, sesame seeds, garlic, sugar, salt, red pepper flakes and green onion. Add the blanched spinach to the bowl with the marinade. Toss gently to coat the spinach evenly with the marinade.
  • Cover the bowl with plastic wrap and let the spinach marinate in the refrigerator for at least 30 minutes to allow the flavors to meld together. Serve chilled as a side dish.
