  • Preheat your oven to 250°F (120°C). Make sure the oven rack is placed in the center.
  • Use a pencil to draw a circle (approximately 8-9 inches / 20-22 centimeters in diameter) on parchment paper. Flip the paper over and place it on a baking sheet.
  • In a clean, dry bowl, use an electric mixer to beat egg whites on medium-high speed until they form soft peaks, usually taking about 2 minutes. Gradually add the sugar while continuing to beat on medium-high speed until they form stiff peaks, which usually takes 4-5 minutes. The mixture should be glossy and smooth. Gently fold in the white vinegar, cornstarch, and vanilla extract into the egg white mixture. Beat for 1 more minute.
  • Spoon the meringue onto the parchment paper within the drawn circle. Create a slight indentation in the center to form a nest-like shape to hold the toppings. Place the baking sheet in the preheated oven and bake for about 75 minutes. Turn off the oven and leave the pavlova inside to cool completely. This may take 1 hour.
  • In a separate bowl, whip the heavy cream and powdered sugar until you have stiff peaks.
  • Carefully transfer the cooled pavlova onto a serving plate. Fill the center with the whipped cream and top with your choice of fresh fruits. Popular options include strawberries, kiwi, and passionfruit. Finish by garnishing with fresh mint leaves.
