In a small bowl, whisk together all the sauce ingredients. Set it aside.

Add a pinch of salt and drizzle a few drops of vegetable oil into a pot of water. Bring the water to a boil. Put the asparagus in the boiling water and let them cook for approximately 1 minute. Drain the asparagus thoroughly and then transfer them to a plate.

In a skillet, pour 1 tablespoon (13 grams) of vegetable oil and heat it over medium heat. Carefully place the scallops into the hot skillet, making sure they are in a single layer. Sear them for about 1 minute without moving them, or until they develop a golden crust on the surface. Flip them and sear the other side for another 1 minute, or until the scallops are cooked through. Remove the scallops from the skillet and transfer them to a plate.

In the same skillet, add another tablespoon (13 grams) of vegetable oil. Add the minced garlic and ginger and stir-fry for about 30 seconds until fragrant. Return the seared scallops and asparagus to the skillet. Stir-fry for 1 minute and season with a pinch of salt and black pepper.
