  • Preheat the oven to 180°C (350°F) and line 2 baking sheets with parchment paper.
  • In a mixing bowl, cream together the softened butter and sugar until the mixture becomes light and fluffy. Beat in the egg and vanilla extract until well combined. The mixture should be smooth.
  • Sift in the flour and baking powder. Gradually add the flour mixture to the wet ingredients. Mix until a soft dough forms. If the dough is too sticky, you can refrigerate it for about 15 minutes to make it easier to handle.
  • Take 2 teaspoons (20g) of the dough and roll them into balls. Place these balls on the prepared baking sheet, leaving some space between each. Use your thumb or the back of a spoon to create an indentation in the center of each cookie. Spoon a small amount of your favorite jam into the indentation of each cookie. Be careful not to overfill, as the jam may spread while baking.
  • Place the baking sheet in the preheated oven and bake for 15 minutes or until the cookies turn lightly golden around the edges. Allow the jam drops to cool on a wire rack. As they cool, the jam will set. Enjoy your homemade jam drops with a cup of tea.
