Heat 1 tablespoon (12g) of vegetable oil in a non-stick pan over medium-high heat. Add the beaten eggs and scramble until they are fully cooked. Remove the eggs from the skillet and set aside.

In the same pan, heat another tablespoon (12g) of vegetable oil over medium-high heat. Add the onion and stir-fry for 3-4 minutes until the onion becomes translucent.

Add peas and carrots, stir-fry for 1-2 minutes until fully cooked, then remove the vegetables from the pan.

Add cooked white rice to the skillet, pour in the remaining 1 tablespoon (12g) of vegetable oil, and stir-fry for 7-8 minutes until the rice grains are separated.

Put the vegetables back into the wok. Add the soy sauce, salt, chicken bouillon powder and scrambled eggs to the skillet, and stir-fry for another 1-2 minutes or until everything is evenly mixed.
