Instructions

Place the eggs in a pot of cold water and bring to a boil. Once boiling, reduce the heat to medium and simmer for 6 minutes for soft-boiled eggs.

Remove the eggs from the pot and gently tap the egg shells to create cracks all around the eggs.

Add water, tea bags, light soy sauce, dark soy sauce, cinnamon stick, star anise, bay leaves, sugar, and salt to the pot. Bring it to a boil, then simmer over low heat for 5 minutes. After that, place the cracked eggs in the pot, along with the broth, and simmer for 20 minutes. Ensure they are fully submerged in the broth. If needed, add more water to cover the eggs.

Let the eggs soak in the sauce for 24 hours, keep the eggs and sauce in the refrigerator. Then, gently peel off the cracked shells to reveal the beautiful marbled pattern on the eggs.
