Steamed Sea Bass Steaks

Ingredients
  • 4 sea bass steaks, about 6 ounces /170 g each (cleaned and scaled)
  • 1 1- inch (2.54cm) ginger (peeled and julienned)
  • 5 slices of ginger
  • 4 green onions (julienned)
  • 2 green onions (cut into long pieces)
  • Sauce:
  • 2 tbsp (32g) soy sauce
  • 2 tbsp (30g) rice wine (or sherry)
  • 1 tbsp (12g) sugar
  • 1/2 tsp (3g) salt
  • 1/4 tsp (0.6g) white pepper powder
  • 1 tbsp (15g) water
  • 1 tbsp (13g) oil
Instructions
  1. Rinse the sea bass steaks under cold water and pat dry with paper towels. Sprinkle the salt over the sea bass steaks.
  2. In a small bowl, mix together the soy sauce, rice wine, sugar, salt, white pepper and water.
  3. Place ginger slices and long pieces of green onions at the bottom of the plate. Place sea bass steaks above them.
  4. Bring water to a boil in the steamer. Once the water is boiling, carefully place the plate with the sea bass steaks in the steamer and cover with a lid. Turn heat to medium-high and steam the sea bass steaks for about 8-10 minutes.
  5. Carefully remove the plate from the steamer. Transfer the sea bass steaks to a serving plate. Discard the ginger slices and long pieces of green onions.
  6. Put the julienned ginger and julienned green onions above the sea bass steaks. Heat 1 tablespoon (13g) oil in a saucepan over medium heat, add the sauce and cook for 30 seconds. Pour in the cooked sauce over the sea bass steaks.
Recipe Notes

You can adjust the seasoning according to your preference by adding more or less soy sauce, sugar, or salt. Also, make sure to use fresh and high-quality sea bass steaks for the best results.
