Shrimp and Broccoli Stir Fry

Ingredients
  • 1 lb (453g) large shrimp (peeled and deveined)
  • 2 cup (180g) broccoli florets
  • 3 cloves of garlic (minced)
  • Cooking oil (as needed)
  • Shrimp marinade:
  • 1 tsp (5ml) cooking wine (or dry sherry)
  • 1/2 tsp (1g) ground white pepper powder
  • 1/2 tsp (3g) salt
  • 1 tbsp (10g) cornstarch
  • Sauce:
  • 1 tbsp (18g) oyster sauce
  • 1/2 tsp (3g) salt
  • 1/2 tbsp (7.5ml) light soy sauce
  • 2 tsp (6g) cornstarch
Instructions
  1. In a bowl, mix cooking wine, ground white pepper powder, and salt, then add the shrimp and mix well by hand. Add cornstarch and mix well again. Let it rest for 10 minutes.
  2. Blanch broccoli florets in boiling water for 1-2 minutes until slightly tender. Drain and set aside.
  3. In a small bowl, mix oyster sauce, salt, light soy sauce and cornstarch. Mix well. Set aside.
  4. In a large pan, heat some cooking oil over medium-high heat. Add minced garlic to the pan and stir-fry until fragrant, about 30 seconds.
  5. Add the shrimp to the pan and stir-fry until they turn pink, about 2 minutes.
  6. Add the blanched broccoli florets and sauce to the pan. Stir-fry for another minute to coat the ingredients evenly with the sauce.
  7. Remove from heat and transfer to a serving dish. Serve hot with steamed rice for a delicious and nutritious garlic shrimp and broccoli stir-fry! Enjoy!
