Shredded Pork with Tofu Gan
Shredded pork with tofu gan is an authentic Chinese home-style dish. Its main ingredients are lean pork and tofu gan. Tofu gan is a product made by removing excess water from tofu during the drying and sun-drying process. Tofu gan can be made into various delicacies, such as pan-fried, braised, stir-fried, and soup dishes. It has a rich texture, soft but chewy. Marinade:

(226g) pork tenderloin
(sliced thinly into strips)

Sauce:

(15ml) light soy sauce

(5ml) dark soy sauce

Instructions

In a bowl, combine the pork and marinade ingredients and marinate for about 20 minutes. Set aside.

Combine the sauce ingredients in a small bowl and mix well.

Heat up a wok over high heat and add 2 tablespoons of vegetable oil. Once the oil is hot, add the pork and stir-fry until it is browned on all sides. Remove from the wok and set aside.

In the same wok, add another tablespoon of vegetable oil. Add the garlic and tofu gan and stir-fry for 1-2 minutes.

Add the cooked pork and sauce, and stir-fry for 2 minutes until the sauce thickens and coats the pork and tofu evenly.

Add the sliced green onions and stir-fry for an additional 10 seconds. Serve hot with steamed rice. Enjoy!
