Ingredients
  • 4 oz (113g) medium-sized shrimp (shelled and deveined)
  • 4 eggs
  • 1/8 tsp (0.7g) salt
  • 1/2 tsp (2g) Shaoxing wine
  • 1/4 tsp (1g) white vinegar
  • 1 tbsp (15g) water
  • 2 tbsp (24g) vegetable oil
  • 1 green onion (thinly sliced)
  • Marinade:
  • 1/2 tsp (2g) Shaoxing wine
  • 1/4 tsp (1.5g) salt
  • 1/8 tsp (0.3g) ground white pepper
  • 1/2 tsp (1g) cornstarch
  • 1 tbsp (15g) egg white
Instructions
  1. Carefully combine the shrimp with all the marinade ingredients and marinate for 5 minutes. Pour water into a pot and bring it to a boil. Add the shrimp to the pot and cook for 20 or 30 seconds. Transfer the shrimp to a big bowl and set aside.
  2. In another bowl, whisk together the eggs, salt, Shaoxing wine, white vinegar and water until well combined. Add the shrimp and green onion to the egg mixture and mix thoroughly to ensure the shrimp is coated evenly with the egg mixture.
  3. Heat the vegetable oil in a skillet over medium heat. Add the shrimp and egg mixture to the skillet. Wait for 30 seconds and begin gently scrambling the eggs by moving the spatula back and forth. Cook until the eggs are set.
  4. Serve the Scrambled Eggs with Shrimp hot as a main dish, accompanied by steamed rice.
