Pineapple Chicken

Ingredients
  • 1 cup (210g) pineapple chunks (drained)
  • 1/2 red bell pepper (cut into pieces)
  • 1/2 green bell pepper (cut into pieces)
  • 1/2 onion (chopped)
  • 2 garlic cloves (minced)
  • 2 tbsp (30ml) vegetable oil
  • Marinade:
  • 1 lb (453g) boneless, skinless chicken breast (sliced)
  • 1/4 tsp (1g) salt
  • 1/4 tsp (0.6g) white pepper powder
  • 2 tsp (10ml) Chinese rice wine (or dry sherry)
  • 1 egg white
  • 2 tsp (10g) cornstarch
  • Sauce:
  • 1 tbsp (15ml) soy sauce
  • 2 tsp (10ml) apple cider vinegar
  • 2 tbsp (25g) sugar
  • 1/2 tsp (3g) salt
Instructions
  1. In a medium bowl, mix together the salt, white pepper powder, rice wine, egg white and cornstarch. Add the chicken slices in the bowl. Marinate for at least 10 minutes.
  2. Combine the sauce ingredients in a small bowl and mix well. Set aside.
  3. In a large skillet, heat vegetable oil over medium-high heat. Add the chicken and sauté for 2-3 minutes, stirring occasionally, until it browns. Transfer the chicken to a plate.
  4. Add bell peppers, onions, and garlic, stir-fry for 2 minutes until the vegetables become tender-crisp. Add the stir-fried chicken slices and pineapple chunks, stir evenly.
  5. Pour the soy sauce mixture over the chicken and vegetables, stirring gently to coat everything evenly. Cook for an additional 2 minutes, until the sauce has thickened. Serve hot with rice. Enjoy!
