Ingredients
  • 1 lb (453g) large shrimp (peeled and deveined)
  • 1/2 cup (80g) cornstarch
  • 2 egg whites (beaten)
  • 1/4 tsp (1.5g) salt
  • Vegetable oil for frying
  • Dressing:
  • 1/4 cup (57g) mayonnaise
  • 2 tbsp (42g) honey
  • 2 tbsp (40g) sweetened condensed milk
  • 1 tsp (4g) lemon juice
  • For the walnut glaze:
  • 1/2 cup (65g) walnut halves
  • 1/2 cup (114g) water
  • 1/2 cup (100g) sugar
Instructions
  1. In a small saucepan, bring water and sugar to a boil. Keep stirring until the glaze thickens, then reduce the heat to medium. Add the walnut halves and continue stirring until the walnut halves turn caramel in color. Drain the walnuts on a cooling rack and set them aside.
  2. In a bowl, marinate the shrimp with egg whites and salt. Then coat the shrimp with cornstarch, shaking off any excess.
  3. Heat vegetable oil in a skillet over medium-high heat until it reaches 350°F (180°C). Fry the coated shrimp in batches until they become golden brown and crispy. Use a slotted spoon to remove them and place on a plate.
  4. Combine the dressing ingredients in a serving bowl and mix well.
  5. Add the fried shrimp and blanched walnuts to the sauce. Stir gently to coat the shrimp and walnuts evenly with the sauce. Serve the honey walnut shrimp hot as a main course, accompanied with steamed rice.
