In a small bowl, combine the olive oil, minced garlic, dried rosemary, salt, and black pepper.

Rub the marinade mixture all over the steaks, making sure they are evenly coated. Let them marinate for at least 15 minutes to allow the flavors to penetrate the meat. If you have more time, you can marinate them for a few hours in the refrigerator.

Let the steaks come to room temperature. Grill them on high heat. Cook a 1-inch / 2.5 cm thick steak for 4-5 minutes per side for medium-rare or 5-6 minutes per side for medium. Check doneness with a meat thermometer; medium-rare should read about 135°F (57°C) and medium about 145°F (62°C).
