Ingredients
  • 1 lb (453g) pork ribs (chopped into bite-sized pieces)
  • vegetable oil (for frying)
  • Chopped green onions (for garnish)
  • Marinade:
  • 8 garlic cloves (minced)
  • 1 tbsp (8g) ginger (grated)
  • 1 tbsp (16g) soy sauce
  • 1 tbsp (18g) oyster sauce
  • 1 tbsp (15g) Shaoxing wine
  • 2 tsp (8g) sugar
  • 1/2 tsp (3g) salt
  • 1/2 tsp (1g) white pepper powder
  • 2 tbsp (20g) cornstarch
Instructions
  1. In a bowl, mix the marinade well and add the pork ribs. Coat the ribs with the marinade thoroughly. Cover the bowl and let it marinate in the refrigerator for at least 2 hours, or preferably overnight for better flavor absorption.
  2. Heat vegetable oil over medium-high heat to 350°F (180°C). Place the pork ribs one by one into the oil, adjust the heat to medium-low, and fry until both sides turn golden. This typically takes about 8 minutes; cook in batches to prevent overcrowding.
  3. Use a slotted spoon to remove the fried pork ribs from the oil and transfer them to a plate.
  4. Heat the vegetable oil in the pan until it reaches 375°F (190°C). Return the fried pork ribs to the pan and fry for 20 seconds. Transfer them to a plate and sprinkle the garlic ribs with chopped green onion.
