Ingredients
  • 7 oz (198g) fresh Enoki mushrooms
  • 2 green onions (chopped)
  • 1 red chili (thinly sliced into rings)
  • Dressing:
  • 1 tsp (5g) soy sauce
  • 1 tsp (4g) sesame oil
  • 1/2 tsp (2g) sugar
  • 1/2 tsp (2g) chicken bouillon powder
  • 1/4 tsp (1g) salt
Instructions
  1. Trim off the tough ends of the Enoki mushrooms and gently separate them into small clusters.
  2. Blanch the Enoki mushrooms in boiling water for about 1 minute. After taking the mushrooms out of the boiling water, rinse them under cold water to avoid overcooking. Drain and set aside.
  3. In a small bowl, whisk together the soy sauce, sesame oil, sugar, chicken bouillon powder and salt to make the dressing.
  4. Pour the dressing over the Enoki mushrooms, gently toss to coat, and garnish with some green onions and red chili. Enjoy the Enoki Mushroom Salad chilled!
