Egg Dumplings

Egg dumplings are one of the classic delicacies during the traditional Chinese Spring Festival. Not only are egg dumplings delicious with a rich texture, but they also symbolize good fortune and reunion. The shape of the egg dumplings resembles ingots, symbolizing wealth and good luck, as well as signifying the beginning of the new year, bringing happiness and blessings.

Ingredients
  • 5 large eggs (beaten)
  • 1 tbsp (10g) cornstarch
  • 2 tsp (10ml) water
  • 1 green onion (chopped)
  • 1/2 lb (226g) ground pork
  • 1 tbsp (15ml) soy sauce
  • 1 tbsp (14g) oyster sauce
  • 1 tbsp (15ml) Shaoxing wine
  • 1/2 tsp (2ml) sesame oil
  • 1/2 tsp (2g) sugar
  • Salt to taste
  • Vegetable oil for cooking
Instructions
  1. In a bowl, add the chopped green onions, ground pork, soy sauce, oyster sauce, Shaoxing wine, sesame oil, sugar and pinch of salt. Add 1 tablespoon of oil to the meat. Mix everything together until ground pork becomes sticky.
  2. In a separate bowl, crack the eggs, add cornstarch and water, and whisk the eggs until they are slightly frothy.
  3. Heat a small skillet over low heat. Add a small amount of vegetable oil to coat the pan. Pour 1 tablespoon of the egg mixture into the skillet, swirling it around to spread it evenly. Place 1-2 teaspoons of the meat mixture in the center of the egg pancake, then fold the egg pancake over and gently press the edges together with a pair of chopsticks to seal, forming a half-moon shape. Continue making the egg dumplings until you have used up all the eggs and ground pork.
  4. Serve the egg dumplings as a snack or appetizer.
