Instructions

Peel the bananas and mash them in a mixing bowl until smooth. Set aside.

In a separate bowl, combine the egg, flour, rice flour, sugar, baking powder, baking soda and salt. Stir until a thick batter is formed.

Add the mashed bananas into the batter and mix until well combined.

Heat vegetable oil in a pot over medium-high heat until it reaches 350°F (180°C). Using a tablespoon, scoop a spoonful of the banana batter and carefully place it into the hot oil.

Fry the fritters until they turn golden brown and crispy, flipping them occasionally to ensure even cooking. This usually takes about 1-2 minutes per side.

Use a slotted spoon to remove the fried fritters from the oil and transfer them to a plate lined with paper towels to absorb any excess oil.
