Instructions

In a large mixing bowl, combine the corn kernels, flour, baking powder, salt, sugar, eggs, milk and butter. Stir until all ingredients are well combined and you have a thick batter consistency.

Pour enough vegetable oil into a large, deep frying pan. Heat the oil over medium-high heat until it reaches 350°F (176°C). Using an ice cream scoop, carefully drop spoonfuls of the corn batter into the hot oil, allowing some space between each fritter.

Fry the fritters for 2-3 minutes on each side, or until they are golden brown and crispy. Use a spatula to flip them halfway through cooking. Once the fritters are cooked to perfection, remove them from the oil and place them on a plate lined with paper towels to drain any excess oil. Repeat the process until all the batter is used.
