Broccoli Rabe and Burrata

Ingredients
  • 1 bunch of broccoli rabe (washed and trimmed)
  • 8 oz (170g) burrata cheese ball
  • 2 tbsp (26g) extra virgin olive oil
  • 2 cloves garlic (minced)
  • 1/4 tsp (0.5g) red pepper flakes (optional, for a spicy kick)
  • Salt and black pepper to taste
  • 1 tsp (4g) lemon juice
Instructions
  1. Bring a large pot of salted water to boil. Add the broccoli rabe and cook for 2-3 minutes until just tender. Drain and immediately transfer the broccoli rabe to a bowl of ice water to stop the cooking process. Once cooled, drain and pat dry.
  2. In a pan, heat the olive oil over medium heat. Add minced garlic and red pepper flakes (if using), sauté for 1-2 minutes until fragrant. Add the blanched broccoli rabe to the pan. Sauté for 3-4 minutes, coating the broccoli rabe in the garlic-infused oil. Season with salt and black pepper to taste.
  3. Arrange the sautéed broccoli rabe on the plate. Divide the burrata ball into pieces, and place it on top of the broccoli rabe. Drizzle the entire dish with lemon juice.
