Instructions

In a medium bowl, mix together the salt, soy sauce, Chinese rice wine, cornstarch and egg white. Add the beef in the bowl. Marinate for at least 20 minutes.

Combine the sauce ingredients in a small bowl and mix well. Set aside.

Heat a large skillet over high heat. Add the vegetable oil and swirl to coat the pan. Add the beef strips to the skillet and stir-fry for 1 minute. Remove the beef from the pan and set aside.

In the same skillet, reserve 1 tablespoon (15ml) of oil. Add the garlic, ginger, and scallions, and stir-fry for 15 seconds until they become fragrant. Add the onion, sliced green and red bell peppers to the skillet and stir-fry for another 1-2 minutes.

Return the cooked beef to the skillet, pour in the sauce, and stir-fry for 1 minute until the sauce thickens. Plate it and serve with steamed rice if you prefer.
