Thai Seafood Salad

Ingredients
  • 1/2 lb (226g) shrimp (peeled and deveined)
  • 1/2 lb (226g) squid (cut into rings)
  • 1/2 lb (226g) scallops
  • 1 cup (150g) cherry tomatoes (halved)
  • 1 cup (150g) cucumber (sliced)
  • 1/2 cup (50g) red onion (thinly sliced)
  • 1 cilantro (chopped)
  • 1/4 cup (7g) fresh mint leaves (finely chopped)
  • Dressing:
  • 1/4 cup (60ml) fresh lime juice
  • 2 tbsp (30ml) fish sauce
  • 1 tbsp (12g) sugar
  • 2 fresh red chillies (finely chopped)
  • 2 inch fresh lemongrass stalk (trimmed and thinly sliced)
  • 2 shallots (thinly sliced)
Instructions
  1. In a small bowl, mix together all the dressing ingredients. Whisk until the sugar has dissolved.
  2. In a large pot of boiling water, cook the seafood until they are cooked through. This will take about 2 minutes for shrimp, 1-2 minutes for squid, and 2-3 minutes for scallops. Drain and set aside.
  3. On a big plate, combine the cooked seafood, cherry tomatoes, cucumber, red onion, cilantro, and mint leaves.
  4. Pour the dressing over the salad and toss well to coat all the ingredients. Serve the Thai Seafood Salad chilled and enjoy!
