Sauce:

Instructions

Combine the sauce ingredients in a small bowl. Set aside.

Put the pork ribs in a large pot and add enough water to cover them. Bring the water to a boil on high heat, using a spoon to skim off any foam that appears on the surface. After about 3 minutes, drain the ribs and transfer them to a large plate.

Heat the vegetable oil in a large wok over medium-low heat. Stir fry the pork ribs until they are browned on all sides, about 5-7 minutes. Add the ginger, scallion, and Shaoxing wine to the wok, then sauté for 2 minutes.

Pour the sauce into the wok, add enough hot water to cover the ribs. Bring to a boil over high heat, then reduce the heat to low and simmer for 40 minutes. Finally, adjust the heat to medium and continue to stir, simmering for about 10 minutes until the sauce thickens.
