Ingredients
  • 2 3/4 cup (330g) all-purpose flour
  • 1 tsp (6g) baking soda
  • 1/2 tsp (2g) baking powder
  • 1 cup (227g) unsalted butter (softened)
  • 1 1/2 cup (300g) white granulated sugar
  • 1 large egg
  • 2 tsp (8g) pure vanilla extract
  • 1/4 cup (50g) granulated sugar (sprinkle over the cookies)
Instructions
  1. In a medium-sized bowl, whisk together the flour, baking soda, and baking powder.
  2. In a large mixing bowl, cream together the softened butter and 1 1/2 cups of sugar until the mixture is light and fluffy. This can be done using an electric mixer on medium-high speed for about 2-3 minutes. Beat in the egg and pure vanilla extract until well combined.
  3. Gradually add the dry ingredient mixture to the wet ingredients, mixing until a soft cookie dough forms. Be careful not to overmix; stop as soon as the dough comes together.
  4. Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
  5. On a lightly floured surface, roll out the dough to about 1/4-inch (0.6cm)thickness. Use cookie cutters to cut out desired shapes and place them on the prepared baking sheets, leaving some space between each cookie. Sprinkle each cookie with a little sugar before baking for a sweet and slightly crispy top.
  6. Bake the cookies in the preheated oven for 10 minutes or until the edges are lightly golden. Be cautious not to overbake; the cookies should still be soft in the middle when you take them out of the oven. They will continue to set as they cool.
  7. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a baking rack to cool completely.
