Instructions

In a medium-sized bowl, whisk together the flour, baking soda, and baking powder.

In a large mixing bowl, cream together the softened butter and 1 1/2 cups of sugar until the mixture is light and fluffy. This can be done using an electric mixer on medium-high speed for about 2-3 minutes. Beat in the egg and pure vanilla extract until well combined.

Gradually add the dry ingredient mixture to the wet ingredients, mixing until a soft cookie dough forms. Be careful not to overmix; stop as soon as the dough comes together.

Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.

On a lightly floured surface, roll out the dough to about 1/4-inch (0.6cm)thickness. Use cookie cutters to cut out desired shapes and place them on the prepared baking sheets, leaving some space between each cookie. Sprinkle each cookie with a little sugar before baking for a sweet and slightly crispy top.

Bake the cookies in the preheated oven for 10 minutes or until the edges are lightly golden. Be cautious not to overbake; the cookies should still be soft in the middle when you take them out of the oven. They will continue to set as they cool.
