Instructions

Peel the potatoes, wash them with cold water, and cut them into thin strips. Soak the shredded potatoes in cold water for 30 minutes to eliminate excess starch. Drain thoroughly.

Heat the vegetable oil in a wok over medium heat. Add the Sichuan peppercorns and stir-fry for 1 minute or until fragrant. Remove Sichuan peppercorns from the wok while leaving the oil in it. Discard the used peppercorns.

Add the red chilies and stir-fry for 30 seconds. Turn the heat to medium-high. Place the shredded potatoes into the wok and stir-fry for 2-3 minutes. Add rice vinegar, salt, and chicken essence to the wok and continue stir-frying for another 2 minutes until the potatoes become tender. Sprinkle with chopped green onions and minced garlic, and stir-fry for 1 minute.
