Ingredients
  • 2 boneless, skinless chicken breasts
  • 3 slices ginger
  • 2 green onions (cut into 1-inch pieces)
  • 1 tsp (6g) salt
  • 1 tbsp (15ml) Shaoxing wine
  • Dressing:
  • 2 tbsp (30ml) soy sauce
  • 1 tbsp (13ml) sesame oil
  • 2 tbsp (30ml) chili oil
  • 2 tbsp (30g) sesame paste (or peanut butter)
  • 1 tbsp (12g) sugar
  • 1/2 tsp (3g) salt
  • 1 tbsp (15ml) Sichuan peppercorn oil
  • 1 tbsp (15ml) Chinese black vinegar
  • 2 garlic cloves (minced)
  • 1 tsp (2g) ginger (grated)
  • 1 tbsp (9g) white sesame seeds (toasted)
  • Garnishing:
  • Fresh cilantro (chopped)
  • 2 tbsp (15g) peanuts (toasted and crushed)
Instructions
  1. Combine the dressing ingredients in a small bowl. Set aside.
  2. In a pot, add the chicken breasts, water, ginger slices, green onions, salt, and Shaoxing wine. Bring it to a boil. Reduce the heat to medium-low and cover the pot. Cook for approximately 16 minutes until the chicken breasts are fully cooked.
  3. Remove the chicken breasts from the pot and place them in a bowl filled with ice water. Once the chicken has cooled, transfer it to a cutting board. Use a rolling pin to tenderize the chicken, then shred it into thin strips and set aside.
  4. On a big plate, add the shredded chicken and pour the dressing over it. Toss well to coat the chicken evenly with the dressing.
