Instructions

Combine the dressing ingredients in a small bowl. Set aside.

In a pot, add the chicken breasts, water, ginger slices, green onions, salt, and Shaoxing wine. Bring it to a boil. Reduce the heat to medium-low and cover the pot. Cook for approximately 16 minutes until the chicken breasts are fully cooked.

Remove the chicken breasts from the pot and place them in a bowl filled with ice water. Once the chicken has cooled, transfer it to a cutting board. Use a rolling pin to tenderize the chicken, then shred it into thin strips and set aside.

On a big plate, add the shredded chicken and pour the dressing over it. Toss well to coat the chicken evenly with the dressing.
