Ingredients
  • 1 lb (453g) of large shrimp (peeled and deveined)
  • 1 lb (453g) of linguine or spaghetti
  • 3 tbsp (42g) of unsalted butter (divided)
  • 3 tbsp (40g) of olive oil (divided)
  • 2 shallots (chopped)
  • 4 cloves of garlic (minced)
  • 1/4 tsp (0.25g) of red pepper flakes (adjust to your spice preference)
  • 1/2 cup (125g) of dry white wine
  • Juice of 1 lemon
  • Salt and black pepper (to taste)
  • Fresh parsley (chopped for garnish)
  • Grated Parmesan cheese (for serving)
Instructions
  1. Bring a large pot of water to a boil. Cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat 2 tablespoons (28g) of olive oil and 2 tablespoons (28g) of butter over medium-high heat. Add shallots, garlic and red pepper flakes. Sauté for about 3-4 minutes and add the shrimp in the skillet in a single layer and cook for about 1-2 minutes on each side or until they turn pink. Remove the cooked shrimp and shallots from the pan and set them aside.
  3. In the same skillet, add the remaining 1 tablespoon (14g) of unsalted butter and 1 tablespoon (12g) of olive oil. Pour in the white wine and lemon juice, bring to a boil. Add the cooked pasta and shrimp to the skillet. Toss everything together to combine. Taste and adjust the seasoning with salt and black pepper as necessary. Garnish with fresh parsley.
  4. Divide the Shrimp Scampi with Pasta among plates, garnish with grated Parmesan cheese, and serve hot.
