Seafood Chow Mein

Ingredients
  • 12 oz (340g) egg noodles
  • 2 tbsp (30ml) vegetable oil
  • 2 garlic cloves (minced)
  • 1 tsp ginger (minced)
  • 4 green onions (cut into 1-inch segments)
  • 1 onion (sliced into strips)
  • 1 carrot (sliced into strips)
  • 1 cup (104g) bean sprouts
  • 4 oz (113g) squid (cut the squid into crisscross patterns)
  • 4 oz (113g) shrimp (peeled and deveined)
  • 4 oz (113g) scallops
  • Sauce:
  • 1 tbsp (18g) oyster sauce
  • 1 tbsp (15ml) soy sauce
  • 1 tsp (5g) sesame oil
  • 1 tsp (4g) sugar
  • 1/2 tsp (3g) salt
  • 1/2 tsp (1g) black pepper
Instructions
  1. Cook the egg noodles according to the package instructions. Drain and set aside.
  2. Combine all the sauce ingredients in a small bowl. Mix until the sugar is dissolved. Set aside.
  3. In the pot of boiling noodles, blanch the squid and immediately remove it as soon as it curls up. Drain off any excess water.
  4. In the same pot, add shrimp and scallops and cook for 1 or 2 minutes. Transfer them to a plate. Drain off any excess water.
  5. Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and ginger to the skillet and stir-fry for 30 seconds until fragrant.
  6. Add the onion and carrot to the skillet and stir-fry for another 2 minutes until slightly softened.
  7. Add the noodles, bean sprouts, squid, shrimp and scallops to the skillet. Stir-fry for 1 minute until the seafood is cooked through.
  8. Pour the sauce mixture and add green onions into the skillet and stir everything together until well combined. Cook for an additional one minute until the sauce thickens.
  9. Serve the Seafood Chow Mein hot and enjoy!
