Ingredients
  • 1 lb (450g) fresh scallops (cleaned and patted dry)
  • 1 lb (450g) fresh asparagus spears (trimmed and cut into bite-sized pieces)
  • 4 cloves garlic (minced)
  • 1 tsp (1g) fresh ginger (minced)
  • 2 tbsp (26g) vegetable oil (divided)
  • Sauce:
  • 1 tbsp (16g) soy sauce
  • 1 tbsp (14g) oyster sauce
  • 1 tsp (4g) cornstarch
  • 1/2 tsp (2g) sugar
  • 1/2 tsp (3g) salt
  • 1/4 tsp (0.6g) ground black pepper
  • 1 tbsp (15g) water
Instructions
  1. In a small bowl, whisk together all the sauce ingredients. Set it aside.
  2. Add a pinch of salt and drizzle a few drops of vegetable oil into a pot of water. Bring the water to a boil. Put the asparagus in the boiling water and let them cook for approximately 1 minute. Drain the asparagus thoroughly and then transfer them to a plate.
  3. In a skillet, pour 1 tablespoon (13 grams) of vegetable oil and heat it over medium heat. Carefully place the scallops into the hot skillet, making sure they are in a single layer. Sear them for about 1 minute without moving them, or until they develop a golden crust on the surface. Flip them and sear the other side for another 1 minute, or until the scallops are cooked through. Remove the scallops from the skillet and transfer them to a plate.
  4. In the same skillet, add another tablespoon (13 grams) of vegetable oil. Add the minced garlic and ginger and stir-fry for about 30 seconds until fragrant. Return the seared scallops and asparagus to the skillet. Stir-fry for 1 minute and season with a pinch of salt and black pepper.
  5. Pour the prepared sauce over the scallops and asparagus. Stir-fry for an additional 30 seconds, allowing the sauce to thicken and coat the ingredients evenly. Transfer the Scallop & Asparagus Stir Fry to a serving platter.
