Ingredients
  • 8 oz (226g) noodles (such as fine dried noodles)
  • 1/3 cup (79ml) vegetable oil
  • 5 oz (141g) green onions (pat thoroughly dry and cut into 1-inch segments)
  • 4 cloves of garlic (minced)
  • Optional toppings: sliced cucumbers, shredded chicken, toasted sesame seeds
  • Sauce:
  • 4 tbsp (60ml) light soy sauce
  • 1 tbsp (15ml) dark soy sauce
  • 1 tbsp (12g) sugar
Instructions
  1. Mix the sauce ingredients in a small bowl and stir until well combined. Set it aside.
  2. In a small pan, heat the vegetable oil over low heat. Add the scallion segments and minced garlic. Stir occasionally until the scallions and garlic are fragrant and slightly golden. Pour the sauce into the pan and cook for 2 minutes.
  3. Cook the noodles according to the package instructions. Drain and set aside.
  4. Pour the scallion oil over the cooked noodles and toss to combine. Serve the scallion oil noodles warm or at room temperature.
