Instructions

Clean the squid and cut into rings or bite-sized pieces.

In a mixing bowl, whisk together the salt, Shaoxing wine, egg and ground white pepper until well combined.

Dip the squid rings in beaten egg, then coat them with cornstarch, shaking off any excess cornstarch.

Heat vegetable oil in a pot to 375°F (190°C). Gently place the coated squid in the hot oil, , a few pieces at a time, and fry for 2-3 minutes until they turn golden brown and crispy.

Using a slotted spoon, remove the fried squid from the oil and place on a serving plate.

Sprinkle with additional salt and pepper to taste. Garnish with green onions and red chili.
