Ingredients
-
1
cup
(185g) glutinous rice
-
2
ripe mangoes
-
3/4
cup
(171g) coconut milk
-
1/4
cup
(50g) sugar
-
Pinch of salt
-
Sesame seeds
(optional, for garnish)
Instructions
-
Rinse the glutinous rice under cold water until the water runs clear. Then, soak the rice in water for at least 4 hours or overnight.
-
Drain the soaked rice and transfer it to a steamer lined with cheesecloth. Steam the rice over medium-high heat for about 25 minutes, or until the rice is tender and cooked through.
-
While the rice is steaming, prepare the coconut sauce. In a saucepan, combine the coconut milk, sugar, and salt. Stir well and heat over low heat until the sugar is completely dissolved. Remove from heat and set aside.
-
Once the rice is cooked, transfer it to a mixing bowl. Pour half of the prepared coconut sauce over the rice and gently mix until the rice is evenly coated. Allow the rice to cool slightly.
-
Peel the mango and cut it into thin slices.
-
Place a portion of the mango slices on a plate and scoop a generous amount of the coconut-infused sticky rice alongside it.
-
Drizzle the remaining coconut sauce over the rice and mango. Optionally, sprinkle some sesame seeds on top for added texture and flavor. Enjoy the Mango Sticky Rice while it is still warm and the flavors are at their best.
Recipe Notes
Note: You can adjust the sweetness of the coconut sauce according to your preference by adding more or less sugar. Additionally, you can garnish the dish with additional fresh mint leaves for a refreshing touch.
