Ingredients
  • 12 oz (340g) spaghetti
  • 2 cup (300g) cherry tomatoes (halved)
  • 3 cloves garlic (minced)
  • 2 tbsp (28 g) olive oil
  • Salt and black pepper (to taste)
  • 2 cup (40g) fresh arugula
  • 4 oz (113g) crumbled feta cheese
  • 4 oz (113g) grated Parmesan cheese
  • Fresh basil leaves (for garnish)
Instructions
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook it according to the instructions on the package until it's al dente. Drain the cooked spaghetti and set it aside.
  2. Combine the halved fresh tomatoes, garlic, and olive oil in a large bowl. Season with salt and pepper.
  3. Add the cooked spaghetti to the tomato mixture. Stir in the fresh arugula, allowing it to wilt slightly in the heat of the spaghetti . Toss everything together to distribute the flavor evenly.
  4. Transfer the pasta to serving plates or a large platter. Sprinkle feta cheese and grated Parmesan cheese generously over the top. Garnish with fresh basil leaves.
