Ingredients
  • 1 small head of cabbage
  • 2 tbsp (26g) vegetable oil
  • 4 cloves of garlic (minced)
  • 4 dried red chili peppers (broken into small pieces)
  • 1/2 tsp (1g) green Sichuan peppercorns
  • Sauce:
  • 1 tbsp (16g) light soy sauce
  • 1 tsp (5g) Chinese black vinegar
  • 1/2 tsp (3g) salt
  • 1/2 tsp (2g) chicken powder
  • 1/2 tsp (2g) sugar
Instructions
  1. Rinse the cabbage leaves and manually tear them into bite-sized pieces.
  2. In a small bowl, combine the sauce ingredients and stir until thoroughly mixed.
  3. In a wok, heat vegetable oil over medium-high heat. Add minced garlic, dried red chili peppers, and green Sichuan peppercorns. Sauté for about 30 seconds until fragrant. Add the torn cabbage leaves to the skillet and stir-fry for about 40 seconds.
  4. Pour the sauce over the cabbage leaves in the wok. Continue to stir-fry for an additional 1 minute until the cabbage is tender yet still retains its texture.
  5. Transfer the Hand-Torn Cabbage Stir-Fry to a serving dish. Serve immediately while still hot.
