Ingredients
  • 2 medium-sized potatoes
  • 1 onion (finely sliced)
  • 1/4 cup (54g) vegetable oil
  • 4 garlic cloves (minced)
  • 2 tbsp (12g) curry powder
  • 1 tsp (2.5g) turmeric powder
  • 1/2 tsp (3g) salt
  • 1 tbsp (12g) sugar
Instructions
  1. Peel the potatoes and cut them into small cubes. Rinse them under cold water to remove excess starch. Drain the potato cubes and transfer them to a bowl. Pat them dry with a paper towel to remove excess moisture, as this can cause splattering when added to hot oil.
  2. Heat the pan of oil over medium-high heat to around 350°F (175°C). Carefully add the potato cubes to the hot oil using a slotted spoon. Fry until golden brown and crisp. Once the potatoes are done, use the slotted spoon to lift them out of the hot oil and transfer them to a plate.
  3. Leave 1 tablespoon (13g) of oil in the pan. Add the onions and stir-fry for about 2 minutes.
  4. Turn the heat to medium low. Add the minced garlic, curry powder and turmeric powder. Allow them to cook for about 1-2 minutes, releasing their flavors.
  5. Add the potato cubes, salt, and sugar to the pan. Stir to combine them with the onions and spice mixture. Once the potatoes have absorbed the curry flavors, turn off the heat.
