Preheat your oven to 350°F (175°C) and butter a 9x13-inch (23 cm x 33 cm) baking dish.

In a saucepan, melt the butter over low heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the flour to create a roux. Gradually whisk in the milk, ensuring there are no lumps. Simmer the mixture for about 5 minutes until it thickens, stirring frequently. Stir in 1 cup (118g) of shredded cheddar cheese. Continue stirring until the cheese is melted and the sauce is smooth. Season the sauce with salt and black pepper. Remove it from heat.

Place a layer of thinly sliced potatoes at the bottom of the prepared baking dish. Pour a portion of the creamy sauce over the potatoes, ensuring they are well covered. Repeat the process, layering potatoes and sauce until you use them all, finishing with a layer of sauce on top. Sprinkle the remaining 1/2 cup (59g) of shredded cheddar cheese over the top.
