Shrimp With Lobster Sauce

Ingredients
  • 1 lb (453g) shrimp (peeled and deveined)
  • 4 oz (113g) ground pork
  • 1 egg (beaten)
  • 2 tbsp (30ml) vegetable oil (divided)
  • 2 cloves of garlic (minced)
  • 1 tsp (2g) ginger (minced)
  • 1/2 cup (75g) frozen peas
  • 1 1/2 tbsp (15g) cornstarch
  • 2 tbsp (30ml) water
  • 1 cup (240ml) chicken or vegetable broth
  • Chopped green onions for garnish
  • Sauce:
  • 1 tbsp (15ml) Shaoxing rice wine
  • 1/2 tsp (2g) sugar
  • 1/2 tsp (3g) salt
  • 1/2 tsp (1g) white pepper
Instructions
  1. In a small bowl, mix together Shaoxing rice wine, sugar, salt and white pepper.
  2. In another small bowl, mix together cornstarch and water to make a cornstarch slurry.
  3. In a pan, heat the vegetable oil over medium-high heat. Add the shrimp to the pan and stir-fry until they turn pink, about 2 minutes. Transfer the shrimp to a plate and set it aside.
  4. Add a little bit more oil to the pan. Add the garlic and ginger to the pan, and stir-fry for 30 seconds until fragrant. Add the ground pork and stir-fry until browned.
  5. Pour chicken broth into the pan and add the peas. Then, add the sauce mixture and stir-fry for an additional 2 minutes until the vegetables are just tender. Return the shrimp to the pan and pour in the cornstarch slurry. Cook over medium heat, while stirring constantly, until the sauce thickens.
  6. Beat in the egg while stirring. Taste and adjust the seasoning with salt and pepper as needed. Sprinkle with chopped green onions.
