Mango Pudding

Ingredients
  • 4 ripe mangoes
  • 1 cup (237ml) milk
  • 2 tbsp (18g) gelatin powder
  • 1/3 cup (67g) sugar
  • 1 cup (237ml) water
  • 1/2 cup (118ml) heavy cream
Instructions
  1. Peel and dice the ripe mangoes. Reserve some mango slices for decoration.
  2. In a blender, puree the diced mangoes until smooth. Pour the mango puree into a large bowl and strain it through a sieve to remove any large lumps. Add the milk to the mango puree.
  3. In a saucepan, combine the gelatin powder, sugar and water. Place the saucepan over medium heat and warm the mixture until it starts to simmer. Stir until the gelatin is completely dissolved. Remove from heat.
  4. Add the dissolved gelatin and heavy cream to the mango puree and stir well until thoroughly combined. Allow the mango puree to cool slightly, then pour it into small bowls.
  5. Refrigerate the pudding for at least 4 hours, or until it is fully set. Once the pudding is set, garnish with fresh mango slices on top. Serve chilled and enjoy!
