Ingredients
  • 1 lb (453g) pork ribs (chopped into 1 1/2-inch / 3.81 cm pieces)
  • 1 lb (453g) fresh lotus root (peeled and cut it into large chunks)
  • 4 slices of ginger
  • 2 green onions (cut into 1-inch / 2.54 cm pieces)
  • 8 dried red dates
  • 1 tbsp (7g)dried goji berries
  • 10 cup (2365g) water
  • Salt to taste
  • Chopped green onions
Instructions
  1. Blanch the pork ribs in boiling water for a few minutes to remove impurities. Place the ribs on a large plate and set them aside.
  2. In a large pot, add the pork ribs, ginger slices, green onions and 10 cups (2365g) of water. Bring the water to a boil and then reduce the heat to low. Let it simmer for about 1 hour, skimming off any foam that forms on the surface.
  3. Add lotus root and red dates to the pot. Continue to simmer for 1 hour until the lotus root becomes soft. Put dried goji berries into the pot and simmer for 10 more minutes. Season the soup with salt to taste.
  4. Remove the pot from the heat, discard the ginger and green onion. Ladle the soup into bowls, sprinkle with chopped green onions and enjoy.
