Instructions

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper.

In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the flour and salt to the butter-sugar mixture. Mix until a crumbly dough forms.

Evenly press the dough into the prepared baking dish. Bake in the preheated oven for about 18-20 minutes, or until it's lightly golden.

In another bowl, whisk together the eggs, sugar, and lemon zest until well combined. Sift in the flour and whisk until there are no lumps. Stir in the lemon juice.

Once the crust is done baking, remove it from the oven and let it cool for a few minutes. Pour the lemon filling over the crust, spreading it evenly. Return the dish to the oven and bake for an additional 20-25 minutes or until the filling is set and the edges are lightly golden.
