Lemon Bars

Lemon bars, with their bright citrusy flavor, are more than just a dessert. The bright yellow of the lemon filling contrasts beautifully with the golden crust. A dusting of powdered sugar on top adds a touch of elegance, like sprinkling winter snow on a lemon grove. What makes lemon bars even more enchanting is their texture. The buttery crust serves as a solid foundation, blending perfectly with the creamy lemon filling, creating a delightful contrast.

Ingredients
  • 1 cup (2 sticks / 227g) unsalted butter (at room temperature)
  • 1/2 cup (100g) granulated sugar
  • 2 cup (240g) all-purpose flour
  • 1/4 tsp (1g) salt
  • For the Lemon Filling:
  • 4 large eggs
  • 2 cup (400 g) granulated sugar
  • 1 tsp (2g) lemon zest
  • 1/3 cup (40 g) all-purpose flour
  • 2/3 cup (153 g) freshly squeezed lemon juice (from about 4-5 lemons)
  • Powdered sugar (for dusting)
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the flour and salt to the butter-sugar mixture. Mix until a crumbly dough forms.
  3. Evenly press the dough into the prepared baking dish. Bake in the preheated oven for about 18-20 minutes, or until it's lightly golden.
  4. In another bowl, whisk together the eggs, sugar, and lemon zest until well combined. Sift in the flour and whisk until there are no lumps. Stir in the lemon juice.
  5. Once the crust is done baking, remove it from the oven and let it cool for a few minutes. Pour the lemon filling over the crust, spreading it evenly. Return the dish to the oven and bake for an additional 20-25 minutes or until the filling is set and the edges are lightly golden.
  6. Remove the lemon bars from the oven and let them cool completely in the baking dish on a wire rack. Cut them into squares or bars, and sprinkle powdered sugar on top for a delightful finishing touch.
