Hot and Sour Soup

Ingredients
  • 4 cup (907g) chicken stock
  • 1/4 cup (7g) dried wood ear mushrooms
  • 1/4 cup (27g) carrots (julienned)
  • 1/2 cup (38g) bamboo shoots (julienned)
  • 3 shiitake mushroom (thinly sliced)
  • 1/2 cup (63g) tofu (cubed)
  • 2 tbsp (20g) cornstarch
  • 2 tbsp (30g) water
  • 1 egg (beaten)
  • Green onions (thinly sliced)
  • Sauce:
  • 1/4 cup (57g) rice vinegar
  • 2 tbsp (33g) soy sauce
  • 1 tsp (4g) toasted sesame oil
  • 1 tsp (2g) ground white pepper
  • 1/2 tsp (3g) salt
  • 1 tsp (4g) sugar
Instructions
  1. Soak the wood ear mushrooms in warm water for 20 minutes. Drain and squeeze out the excess water. Thinly slice the wood ear mushrooms.
  2. Combine the sauce ingredients in a small bowl and mix well. Set aside.
  3. Add chicken stock to the pot, bring it to a boil, and add wood ear mushrooms and carrots; boil for 2 minutes. Afterward, add bamboo shoots, shiitake mushrooms, and tofu, allowing them to simmer for an additional 2 minutes. Reduce the heat to medium-low and add the sauce mixture to the soup and stir well.
  4. In a separate bowl, mix cornstarch with 2 tablespoons (30g) of water until smooth.
  5. Slowly pour the cornstarch mixture into the pot while continuously stirring. Cook for 1 minute until the soup thickens. Slowly pour in the beaten egg, stirring the soup in a circular motion.
