  • 1/4 cup (58g) butter
  • 1 onion (chopped)
  • 10 oz (283g) fresh broccoli florets
  • 3 cup (720g) chicken broth
  • 1 cup (240g) heavy cream
  • 3 tbsp (23g) all-purpose flour
  • Salt and pepper to taste
Instructions
  1. In a pot, melt the butter over medium heat. Add the onion and cook, stirring occasionally, for about 3-4 minutes. Add the broccoli to the pot and pour in the chicken broth. Bring the soup to a boil, then reduce the heat. Cover the pot and let it simmer for about 10-12 minutes, or until the broccoli is tender.
  2. Carefully transfer the soup in batches to a blender and blend until smooth.
  3. Return the blended soup to a Dutch oven. Stir in the heavy cream, and add the flour. Simmer for an additional 5-10 minutes to heat the soup through. Season with salt and pepper to taste.
  4. Ladle the creamy broccoli soup into bowls. Serve hot and enjoy!
